Functional Food Lessons

 

These lessons address two stages of readiness to act derived from the Stages of Change framework, Decision Determination and Action. [Stages of Change includes precontemplation, contemplation, decision determination, action and maintenance.]

  • The Decision Decide Presentation addresses the decision determination stage. This presentation explains the links between diet and cancer and how functional foods help reduce the risk of breast, prostate and colon cancer. The risks for men and for women are highlighted and the participant is encouraged to decide how to move into the action phase where efforts to increase or alter food habits occurs. In addition to the PowerPoint presentation, several supplemental materials are provided.
  • Eight functional food presentations are designed for consumers in the action stage. The lessons share the same format and are to be presented as one-time contacts to inspire trying the recipe provided.

    Each presentation listed below includes a lesson plan, PowerPoint presentation, factsheet, tip sheet, crossword puzzle, recipes, and an evaluation. The second page of the evaluation booklet contains post delayed pretest questions that should be explained to participants. It is suggested that the educator go over the first question with them.
